What’s Cookin’ Edition 2.5: Egg Roll/Noodle Bowl Mash Up
This is a skillet recipe. If you have fresh grated or powdered ginger, throw it into the skillet! As always, adjust the ingredients to your taste and what you have on hand. Find the wonton strips in the salad or condiment section of the store. Udon noodles are super good as well, drain well before you add to bowl.
Ingredients:
1 lb. lean ground pork or chicken
1 chopped shallot
1 tsp. garlic powder
Salt & pepper
2 tbls. Soy sauce
2 tbls. Teriyaki sauce
3 cups shredded cabbage (pre-shredded coleslaw mix works great!)
1 shredded carrot
1 packet yakisoba teriyaki stir fry noodles -prepare per package directions
¼ cup wonton strips (the salad topping type)
Sweet and sour sauce
Add meat, sauces, seasonings and veggies to a skillet and mix well, cover and cook over medium heat stirring frequently and breaking meat into tiny crumbles, cook thoroughly, uncover once cabbage cooks through and allow some juices to cook off. Drain meat mixture in colander.
Put prepared stir fry noodles into bottom of bowl, spoon meat mixture over noodles, sprinkle top with wonton strips and drizzle all with sweet and sour sauce.
