What’s Cookin’ Eighth Edition: Barley Chicken Apple Salad

This is a flexy type of salad; you can adjust the ingredients according to what you have on hand. It can be sweet-tart as listed or savory if you omit the cinnamon and replace the apple, craisins and goat cheese with tomatoes, olives and bell peppers and diced mozzarella. The barley gives this salad a hearty element that is really satisfying.

Ingredients:

1/3 cup pearled barley

2/3 cup water

Dash of salt and a dash of cinnamon

Put into saucepan. Bring to a boil, cover and simmer for 20 minutes. Cool completely.

Add:

1 Chopped apple

1 cup chopped celery

1 cup chopped cooked chicken

¼ cup Craisins

½ cup chopped Chevre Goat Cheese-blueberry or cranberry coated if you can find it

1/3 cup Fat Free Raspberry Vinaigrette dressing

 

Mix it all together well. Chill.
