What’s Cookin’ Ninth Edition: Pressure Cooker Meatloaf

Ingredients:

1 lb. lean ground beef

1 chopped shallot

1 tsp liquid hickory smoke

1 tsp steak seasoning

1 tsp garlic powder

1/2 cup hickory brown sugar barbeque sauce

½ cup Eggbeaters

1 cup crushed saltine crackers

½ cup milk

 In a measuring cup, cover crushed saltines with milk and set aside. Assemble remaining ingredients in bowl, add soaked crackers and mix well.

 Coat pressure cooker pan with cooking spray, press meat mixture into bottom and coat the top of the loaf with cooking spray. Use a narrow glass to press an indentation into the center of the loaf about an inch or so deep.

 Seal the cooker and turn to Meat Setting. Allow the cooker to slow-release steam.

 Serve with BBQ sauce.
