What’s Cookin’ Fifth Edition: Ham and Pineapple Rice
This isn’t a very pretty recipe, but it is so good! It is a mini pressure cooker recipe. I would probably not make it in a pan, but if you try it that way, bring the mixture to a boil, reduce heat and simmer 20 minutes until the rice is cooked, stir it occasionally to prevent the pineapple juice from scorching the pan.
Ham and Pineapple Rice
Ingredients:
1 cup rice
1 tsp coconut oil, melted
Salt & Pepper
1 ¼ cup water
1 8-ounce package diced ham
1 20-ounce can pineapple chunks in water, undrained
1/3 cup teriyaki sauce
Place the rice and melted oil into a small bowl and stir to coat the grains of rice, add a dash of salt and pepper and stir again. Put rice into the bottom of the pressure cooker and pour water in. Then add the diced ham, pour the undrained pineapple over ham and top it all with the teriyaki sauce. Set Cooker to rice setting, 10 minutes.
