What’s Cookin’ Third Edition: Skillet Gnocchi
This is a single skillet recipe. You can adjust the ingredients to whatever veggies you have on hand, SOME people in Our Ramblin Van do not like mushrooms which is a crying shame because I think they would be delish in this recipe. Find what you like and adapt it to suite you. I like sweet sausage with basil, but you can change it up with spicy sausage and oregano if you prefer. Place the extra gnocchi into a zipper seal baggie and tuck it into the freezer for the next gnocchi recipe you want to make.
Skillet Gnocchi:
Ingredients:
1/2 lb. ground sweet Italian sausage
1/2 package gnocchi
2 tbls olive oil
1 tbls butter
1 chopped shallot
1/4 cup sundried tomatoes, chopped into small pieces
1/2 cup grape tomatoes, sliced in half
1/4 cup chopped fresh basil (if you don’t have fresh, substitute 1 tbls dried basil)
1 chopped red or yellow bell pepper
salt, pepper and garlic powder to taste
shredded parmesan cheese
Brown Italian sausage in skillet then remove and set aside. Add oil and butter to skillet and add gnocchi, press into single layer and allow to brown about 2-3 minutes per side, gnocchi should be crispy, but not burned. Remove browned gnocchi from skillet and set aside with sausage, do not drain pan. Add the shallot, sundried and fresh tomatoes, fresh basil and red pepper to the skillet, sprinkle salt pepper and garlic powder over all to taste, sauté until the shallot and peppers soften, then add the sausage and gnocchi back to skillet, stir and sauté until well blended.
Serve sprinkled with parmesan cheese.
