What’s Cookin’ Edition 3.5: Dutch Oven Man Chili

Ingredients:

1 bag match-light charcoal

1 slice bacon, chopped into small pieces

1-pound lean ground beef

½-pound ground pork

1 chopped onion

1 packet Kinder’s Wood Fired Chili Mix

2 cups water

1 can Rotel Tomatoes and Green Chilis

1 can chopped green chilis

1 can crushed tomatoes

1 can seasoned black beans

1 can seasoned chili beans

1 can golden hominy, drained

Start the charcoal and wait until the coals turn white to begin cooking.

Put the Dutch oven over the coals and adjust height above coals to the place where meat can brown, but not burn.

Brown the bacon bits first, leave fat and bacon in oven and add the chopped onion, ground beef and pork, brown. Add seasoning packet and water stir, add remaining ingredients, stir. Cover oven with lid and adjust coals to heat evenly adding some to the lid, carefully lift lid and stir to prevent scorching, cook until hot and bubbly.

Serve over corn chips and top with shredded cheese.
